Baked Chicken Bruschetta Roll-Ups

Finding delicious, healthy meals that your whole family, even the little ones, enjoys can sometimes be difficult. However, this chicken bruschetta roll-up is sure to be a hit at the dinner table (and your left-over lunch at the office). 


-Raw Chicken Breast Cutlets (about 1-2 per person)
-Fresh Basil
-Fresh Tomato
-Mozzarella Cheese (shredded or pearl)
-Olive Oil
-Whole Wheat Bread Crumbs
-Grated Parmesan Cheese
-Fresh Ground Pepper
-Olive Oil Cooking Spray


1. Wash and dry your raw chicken breast cutlets
2. Lay each cutlet flat on a cutting board
3. Place one leaf of basil, a slice of fresh tomato, and top it off with your mozzarella
4. Roll each cutlet up (starting at the larger end) like you would a sleeping bag (no toothpick necessary
5. Fill a small bowl with olive oil and fresh ground pepper, and another bowl with panko, whole wheat bread crumbs and the grated parmesan cheese mixed together. 
6. Dip each roll-up in the peppered olive oil, and then coat each roll-up in the breading mixture. 
7. Place each roll-up on a cookie sheet sprayed with olive oil cooking spray
8. Bake at 450 degrees for 15-20 minutes

Serve with a simple arugula salad or some fruit for a complete, low-calorie, delicious dinner. If the hubby wants something a bit more substantial, serve with garlic bread and/or pasta. Try to sneak in whole wheat pasta without telling them for a healthier pasta dish if he and the kids can’t notice the difference. Depending on how many sides are being served, 1-2 roll-ups per person is sufficient (1 roll-up for children).
