Prep time: 35 min

Cook time: 10-15 min

Total time: 45 min - 1 hr

Yield: 4 servings

  • 2 Skinless Boneless Chicken Breast
  • 1/3 cup All Purpose Flour
  • 1/3 cup Olive Oil
  • 1 container/8 ounces Sliced Mushrooms
  • 2 tablespoons Butter
  • 1/2 cup Sweet Marsala Wine
  • 1/4 cup Chicken Stock
  • 1/4 cup Dry White Wine
  • 3 tablespoons Finely Chopped Parsley (Garnish)
  • A pinch Salt and Pepper

Cooking Directions

  1. Carefully split each breast into two pieces.

  2. Place a piece of plastic wrap over each slice and pound flat using a meat tenderizer until the chicken is approximately a quarter inch thick. Season well with salt and pepper.

  3. Dredge each piece of chicken in flour.

  4. Over medium heat, heat oil.

  5. When oil is hot, fry each piece of chicken for 3-4 minutes per side, or until the chicken is a nice golden brown. Depending on the size of your frying pan, you might need to do this in two batches.

  6. Remove chicken from heat, and place them on a serving platter and cover with foil. You can use a paper towel to soak up any excess grease.

  7. Reduce heat to a low-medium flame, and add the butter and mushrooms.

  8. Saute mushrooms for 5 minutes, lightly seasoning them with salt and pepper.

  9. Add marsala wine, white wine, and chicken stock, and reduce the liquid down. (Approximately 3-5 minutes)

  10. Pour the mushrooms and sauce over the chicken breasts, sprinkle some parsley, and serve hot! You can pour chicken over a bed of pasta if desired.

  11. Enjoy!
