Healthy Kid Friendly Chicken Nuggets

Getting your kids to eat healthy foods can be more difficult than pulling teeth. A good way to “trick” your kids into eating healthy is to create lighter substitutions for their favorite foods instead of force feeding them carrots and spinach. 

Here is a recipe for crunchy, juicy, fresh chicken nuggets that your kids are guaranteed to love, and you can feel good about feeding to them!

Ingredients:

-2 large, raw, defrosted chicken breasts
-Olive oil
-Panko
-Whole wheat bread crumbs
-Grated parmesan cheese
-Fresh ground pepper
-Olive oil cooking spray

Preparation:

1. Preheat your oven to 425 degrees,
2. Fill small dish with olive oil and generously grind fresh ground pepper into the olive oil,
3. In a larger bowl, mix panko, whole wheat bread crumbs, grated parmesan cheese, and pepper together,
4. Spray a cookie sheet lightly with olive oil cooking spray,
4. Cut your chicken breasts into nugget sized pieces,
5. Dip each nugget into the olive oil and pepper mixture, then coat with the bread crumb mixture,
6. Place each nugget on the oiled cookie sheet and spray the tops lightly with the olive oil cooking spray,
7. Cook the nuggets for 10 minutes,
8. Remove the nuggets from the oven and flip each nugget over,
9. Cook for another 5 minutes. 
10. Stick each nugget with a toothpick for fun, easy, kid-friendly eating and dipping. (optional)

Serve these nuggets with sliced bananas and strawberries. Try serving the nuggets with honey as the dipping sauce for a good substitution for high fat and calorie sauces like ketchup and ranch. The sweet and savory combination is sure to get your kids hooked on this new, healthy lunch. 

The best part about this meal is the leftovers; simply put any leftovers in a Tupperware container and refrigerate. When you are ready to eat these leftovers, just bake in the oven for 10 minutes (no need to flip) and voila!
