Chicken Parmasian

REAL Chicken Parmesan

 Are you always in a hurry and never have time for a delicious meal with the family?  Well, here is a quick and DELICIOUS Italian dish that is sure to get everyone’s taste buds going. And the best part is, it only takes 45 minutes to complete including prep time!
You will need:
•    2 Chicken breasts (large, defrosted)
•    1 bag of penne pasta
•    1 bag of orecchiette pasta
•    1 can of pasta sauce of your choice (vodka, three cheese, or tomato basil are preferable)
•    2 cups of flour
•    2 eggs
•    4 slices of provolone cheese
•    Italian style bread crumbs
•    Various seasonings

Prep:
1.    Preheat oven to Broil.
2.    Put the 2 cups of flour in a bowl and season with oregano, sea salt, fresh ground pepper, chili powder, ground red peppers, garlic salt and onion powder.
3.    Crack your two eggs in a bowl, stir or scramble.
4.    Place a generous portion of Italian bread crumbs in a bowl.
5.    Take your first chicken breast, cover it in the seasoned flour ENTIRELY.
6.    Take the same chicken breast and now cover it in egg.
7.    Take the same chicken breast and now cover it in the Italian bread crumbs.
8.    Now, this is very important, repeat steps 5 and 6. (Do you ever wonder how restaurants get their bread crumb coats so thick and crispy? This is how! Double up on your egg and bread crumb layers.)
9.    Repeat steps 4-7 with your second chicken breast.

Cook
10.    Place both breaded chicken breasts in a lightly greased, glass pan.
11.    Broil for 5 minutes.
12.    Flip the breasts over and broil for another 5 minutes.
13.    Remove the chicken from the oven and generously lather the chicken with your pasta sauce of choice.
14.    Place back in the oven and cook for 25 minutes at 350 degrees.
15.    While the chicken cooks, cook your pasta: Mix the penne and the orecchiette pastas together in a pot of salted, boiling water and let the cook for 10 minutes, stirring occasionally.
16.    Once the pasta is cooked and tender, drain the pasta and set aside.
17.    Once the chicken is done cooking, remove it from the oven and place 2 large slices of provolone cheese on each breast.
18.    Place the chicken back in the oven and cook for 5 minutes at 350 degrees or until the cheese is melted.
19.    Put generous portions of the pasta onto plates, add more sauce, and top it off with the completed chicken breast.
20.    Viola! Enjoy!
